I think it depends on what it is. I've tried snails cooked the french way, I couldn't even swallow it, the taste was fine, that's not the problem. A couple of years ago, I tried snails again at a vietnamese restaurant, still couldn't eat them for the same reason.
I've managed to eat clams once or twice, most of the time, I really don't care for the texture, but my dad made me try some at a restaurant once and those were actually pretty good. I guess I'm a tad weird sometimes.
For example, I cannot eat fresh mangoes, I've tried, I really do not like the taste, unless I'm having a really bad allergy day, then I love them. I love mango nectar, mango flavored stuff and dried mangoes, I just really don't like fresh mangoes for some reason, it's almost like, to me, they have a radish after taste.
There's only one vegetable I won't eat and that's pickled beets. I tried a stupid diet once, where you had to eat over a cup of pickled beets, after two slices I almost made myself sick. I've never had them any other way, I'd gladly try them prepared differently, but nobody could ever make me eat pickled beets again, just the smell of it upsets my stomach.
I love mushrooms in any form, but I think they almost always keep somewhat of the same texture. My mom makes some mean pickled mushrooms, they're kinda sweet, garlicky and sour at the same time. They always make me think of xmas, that's when she'd usually make them.
